{WIAW} Porky and Primal

Linking up with Peas and Crayons today because it’s What I Ate Wednesday, a day to share the meals I’ve prepared for myself and eaten, and an opportunity for you to see the day to day meals of a primal eater.

Today’s meals are all about my least favourite meat: pork. Ironic!

Breakfast

I had a typical, weekday breakfast.

Pat lent a helping hand this past weekend with meal prep, and made his first Whenever Quiche with mushrooms, spring onion (green onion), bacon, with a hint of chili powder.

I also had my usual two fruits (raspberries and blueberries), topped with two dollops of coconut cream, and my most favourite treat in the world: a Nutter Bomb. I’ve been making these things with double the amount of peanut butter lately, which gives a more dense and solid ball. I also leave some of the nuts whole or in larger pieces; it’s a nice surprise when I’m eating.

And no breakfast, week day or weekend, is complete with out the best primal breakfast accompaniment: bulletproof coffee. Or for me, bulletproof espresso: two shots of espresso + 1 tbsp coconut oil + 1 tbsp Kerrygold Butter (form grass-fed cows) + 1 heaped tsp xylitol to sweeten. I love my breakfast, but this is the highlight of it.

Lunch

I love slow-cooked meat, and I have yet to find a more simple, more delicious slow-cooker meal than Nom Nom Paleo slow-cooked Kalua Pig. I put this in our slow-cooker Monday and returned home to heavenly pork smells.

Today’s lunch was leftover Kahlua Pig on lettuces leaves slathere with full-fat cream cheese, sitting on a bed of rocket (arugula). I topped this makeshift salad with diced tomatoes, spring onions, and sliced avocado.

I didn’t actually eat the carrot sticks for lunch, but I did eat that Caveman Keto Fat Bomb, topped with chia seeds. Another daily staple in my primal eating.

Dinner

To round up this porky day, we had grilled Heck Sausages for dinner with a simple salad. This brand of sausages is special because they’re gluten-free and consist of 97% pork shoulder meat, contrary to the lower meat, higher filler sausages on the market. And I can buy these sausages at Tesco, bonus!

Pork aside, the lovely people at 2pure have sent me another running care package, full of Nathan reflective gear, in time for  winter running and dark nights. I’ve got lights, gloves, a hat, even shoe laces –  all so I can be seen while running at night.
