What I Ate Wednesday

Today is Wednesday and I’m going to the blog party, hosted by Meghan at Clean Eats, Fast Feets, where we talk about what we ate, on a given day.

As a primal eater, I think these posts are incredibly valuable as they answer the question many non-primal people ask “But what do you eat?????”

What’s for breakfast you ask? This:

I’ve changed breakfast up a bit lately, and rather than my usual Whenever quiche – which gurantees an egg + veg for breakfast – I started making an egg and veg, for breakfast. Literally.

When we were in Italy, I would make a big pot of stewed vegetables to have as an accompaniment to all meals. This would be eaten hot, cold, with rocket (arugula) and padano cheese, or heated up and tossed in an omelette. I will posting this incredibly versatile recipe very soon.

I also ate my usual fruit + Nutter Bomb + coconut cream, enjoying some orange and mango, two fruits I haven’t eaten for a while. I just kinda forgot about them!

I washed down my delicious and filling breakfast with my usual cup of bulletproof espresso: 2 shots espresso + 1 tbsp butter + 2 tbsp coconut oil + 1 tsp xylitol. Yes, I’ve upped my coconut oil intake.

Lunch was a mish mash of what I had in the fridge: chicken breast, seasoned with salt, pepper, paprika and garlic granules, fried in ghee. I also fried some prosciutto on the side, still channeling Italy. This was served with carrot sticks and a salad of lettuce, cucumber, tomato, yellow pepper, and blue cheese, tossed in balsamic vinegar and olive oil. I loved fried prosciutto by the way.

Dinner was something I’ve been eating a lot of lately, in preparation for my races this weekend (of which I’ll write more about tomorrow): sweet potato. I’ve been baking them lately, then serving them with all sorts of toppings. This one consisted of mushrooms and kale fried in butter, bacon, an egg and a side salad. Very filling, great muscle energy and amazing.

  1. Great variety & functionality in your daily nutrition, sounds really tasty and not boring! I need to refocus on keeping it simple while adding variety. I’m definitely gonna try adding baked yams/sweet potatoes with grasdfed but try & cinnamon for a breakfast option. Had a while ago at primal friends and was blown away how good it taste with morning coffee!
