What I Ate Wednesday

Happy What I Ate Wednesday, my day of showing you some of the delicious primal meals I eat on a daily basis.

Breakfast

As you may have seen a few weeks ago, I’ve been into my cauliflower rice lately. It’s a great way to combine flavour and vegetables, along with protein, in my first meal of the day. Today’s breakfast was Tumeric Cauliflower Rice, with peppers, carrots and spinach, served with a fried egg.

I also enjoyed a bowl of fruit, with coconut cream and a crumbled nutter bomb on top. This is a deconstructed view for you.

And finally, if you know me and my breakfast well, you’ll know that I always have a bulletproof espresso, made with two shots espresso + 1 tbsp Kerrygold butter + 2 tbsp coconut oil. I will never tire of this drink. Don’t knock it until you try it.

Lunch

While I enjoy fish, sometimes I feel like I need to be in the mood for it. One fish I’m enjoying lately is Rainbow Trout, so I was pretty happy to discover smoked Rainbow Trouts fillets for sale at Tesco earlier this week.

I enjoyed this with a spinach salad avocado and some leftover roasted potato to feed my muscles! Dessert was a fat bomb and a huge mug of Matcha Green tea.

Dinner

Do you ever get stuck in food ruts and routines, and stick to the same proteins day in and day out? We do. So to change it up, I bought us some prawns!

I fried them in garlic butter and served them with a baked sweet potato, topped with blue cheese (delicious combo!), and a huge ass spinach salad.

We also had oven-roasted British asparagus; it’s in season here!

  1. I never thought about putting blue cheese on a sweet potato – that sounds amazing! I was in a rut where I made cauliflower rice and tons of sweet potatoes when I first started out eating paleo that I feel like I’ve been taking a huge break from them. One thing that will never change though is my love of eggs for breakfast. I seem to be eating a lot of fish lately for lunch but that’s because it’s super easy and cheap! I hope I never tire of that.

    • I totally agree about fish: my easy and fast lunch is a salad + avocado + sardines. Don’t know how much my colleagues like the smell though :/

      And yes, blue cheese + sweet potato is awesome
