Does anyone feel like June just flew by? Does anyone feel like 2015 has flown by????!??! I don’t know about you, but my life is pretty hectic by choice right now: full time work, half marathon training, article deadlines, food prep every day and every week, and trying to have somewhat of a life. It is for all these reasons my blog has been bit quiet lately, and it is for these reasons today’s What I Ate Wednesday post is going to be lazy. I’m not linking up to anyone’s blog party, nor am I posting the usual WIAW logo. Rather than going to the party, I’ll stay at home, eat my food, lie in bed and watch live-streaming on my laptop. Graham Norton anyone?

Weekends, I tend to eat slightly different. Because my fruit + coconut cream + crumbled nutter bomb is my absolute favourite, I will eat it first. Weekdays, I eat my eggs + veg first.
This was enjoyed at about 8 am.
With my bowl of goodness, I drank a cup of bulletproof espresso: 2 shots espresso + 2 tbsp coconut oil + 1 tbsp Kerrygold butter + 1 heaped tsp xylitol.
Because that breakfast contained barely any protein (but a whole bunch of fat and carb), I got hungry again by 11. Did you know the combination of protein and fat at every meal makes you feel fuller, longer? To cure this hunger, I made a 2 egg omelette with chestnut (crimini) mushrooms, aspragus and spinach.
I’ve been making a lot of recipes lately from Stupid Easy Paleo‘s The Performance Paleo Cookbook. One I’ve fallen in absolute love with is the Roasted Beet(root) and Orange Salad (with fresh mint). Wow! WOW!
I ate this at about 3 pm.
Beets are my absolute favourite, and I made this salad with organic ones from Tesco. I love that they’re in season just now.
I also had a fat bomb.
I’ve incoroporated beets into my diet for days when my muscles need more fuel. What a treat 🙂
By 7pm, after hours of researching, writing and procrastinating with TED talks, it was dinner time.
I had Nom Nom Paleo Cracklin Chicken thighs with Chinese Five Spice, served with a variation on my snack salad. I used the beets, orange and mint, but added snap peas, spring onion (green onion), and spinach as well. I tossed this in the salad vinaigrette and served it. And devoured it.
I enjoyed this with oven roasted sweet potato and The Clothes Make the Girl’s Magical Tahini Dressing, which has the deliciousness of humus, but with no FODMAPS, so no farts.
And because I love food, I made some banana chocolate ice cream with frozen banana and Rebel Kitchen Chocolate Mylk (also a Tesco find) made with coconut milk, cocoa and dates. Totally paleo, and totally splashed all over my kitchen when I blitzed it in the food processor.
This day was pretty carb-heavy with more fruit, the beets and the sweet potato, but it was all for a reason: I did a 14 mile long run the following day, and smashed my half marathon PB by 5 minutes. Worth it.
